Cinnamon & Molasses Cookies
- 1 cup Butter, softened
- 1 1/2 cup Sugar
- 1 egg
- 2 tbsp Molasses
- 2 1/2 cup All-purpose Flour
- 1 1/8 tsp Baking Soda
- 1 1/2 tbsp Cinnamon
- 1/4 tsp Salt
- Cream together the butter and sugar
- Whisk together the egg and molasses.
- Slowly incorporate into batter.
- Sift together the flour, baking soda, cinnamon and salt.
- Slowly mix into batter, working in batches.
- In a small bowl, mix together a spoonful of sugar and a spoonful of cinnamon for sprinkling.
- Dish onto parchment, silpat or greased pan.
- I like a #40 disher (1.75 tbs).
- Sprinkle each cookie with a pinch of the cinnamon sugar.
- Do not flatten.
- Bake at 350AF for 10 minutes.
