Red velvet cupcakes

  1. Preaheat oven to 350F or 170C.
  2. Line pan with paper liners.
  3. In a bowl, sift flour, add cocoa powder,baking powder,baking soda,salt and mix.
  4. In another bowl, mix oil and sugar, beat in egg.
  5. Add the buttermilk (if not available, you can mix 1teaspoon of white vinegar and 1/2 cup milk), add food colour, coffee and vinegar.
  6. Mix in flour.
  7. Careful not to overmix.
  8. Pour batter into pan and bake until toothpick inserted in the centre comes out a bit crumbly.
  9. Remove from oven and cool before removing from pan.
  10. Cool completely before frosting.
  11. This cake tastes amazing with cream cheese frosting.
  12. Enjoy
