Red velvet cupcakes
- 1/2 oil
- 3/4 cup Sugar
- 1 Egg
- 1 1/2 tbsp Unsweetened cocoa powder
- 2 tbsp Red food colouring
- 1/2 tsp Vanilla
- 1/2 cup Buttermilk
- 1 cup All purpose flour
- 1/2 tsp Salt
- 1/2 tsp Baking soda
- 1/2 tsp White vinegar
- 1/2 teaspoon baking powder
- 1/4 cup coffee( 1/4 cup hot water+ 1/4 teaspoon coffee granules)
- Preaheat oven to 350F or 170C.
- Line pan with paper liners.
- In a bowl, sift flour, add cocoa powder,baking powder,baking soda,salt and mix.
- In another bowl, mix oil and sugar, beat in egg.
- Add the buttermilk (if not available, you can mix 1teaspoon of white vinegar and 1/2 cup milk), add food colour, coffee and vinegar.
- Mix in flour.
- Careful not to overmix.
- Pour batter into pan and bake until toothpick inserted in the centre comes out a bit crumbly.
- Remove from oven and cool before removing from pan.
- Cool completely before frosting.
- This cake tastes amazing with cream cheese frosting.
