Vegetarian Black Quinoa Taco Salad

  1. Rinse quinoa under cold water and drain.
  2. Pour the quinoa into a large pot, and stir in chicken stock and taco seasoning.
  3. Cover pot with a lid and bring to boil, and then reduce heat to simmer.
  4. Cook on low about 20 minutes or until all liquid has been absorbed.
  5. When ready to serve, scoop black quinoa into bowls and top with any desired toppings.
