South Dakota Cabbage in Bacon-Cheese Sauce
- 1/2 lb. bacon
- 1/4 cup bacon fat
- 1/4 cup all-purpose flour
- 2 cups milk
- 1/4 lb. shredded cheddar cheese
- 1 md. head green cabbage, cut into wedges
- Croutons
- Cook bacon; drain and keep warm.
- Prepare white sauce with bacon fat, flour and milk.
- When thickened, stir in cheese, salt and pepper to taste.
- Cook cabbage in small amount of water until tender, approximately 10 minutes.
- Drain and put on hot platter.
- Top with cheese sauce and garnish with crumpled bacon.
- Sprinkle with croutons.
