Baigan Bharta / Brinjal (Eggplant) Chutney ( )

  1. Place the tomatoes and brinjal on a gas stove and turn flame to med-high.
  2. Let them cook/roast for about 5 minutes.
  3. Keep turning them once in a while to prevent burning
  4. Once ensured that they are cooked, keep them aside.
  5. After they cool, peel of the scalded skin.
  6. Using hands and 2 forks pluck the tomatoes and brinjal and shred them.
  7. Keep it a uniform and bit coarse for good texture
  8. Add the coriander, chopped chili and turmeric
  9. OPTIONAL.
  10. Add some tadka (indian seasoning made in hot oil with dried pulses and mustard)
  11. Mix well and serve.
  12. Can be eaten with rice or roti.
