Shredded Romaine With Garlic Vinaigrette Recipe

  1. In a small saucepan of boiling water, boil garlic for 10 min, drain it well.
  2. In a large salad bowl mash it to a paste with the salt.
  3. Whisk in the mustard and vinegar, add in the oil in a stream, whisking till it emulsifies.
  4. Add in the Romaine, toss well and season with the pepper.
  5. Sprinkle Parmesan and pine nuts over salad.
  6. This salad is especially good with a rich meal, and is also easy to take to "Potluck", etc.
  7. I just make the dressing ahead in a jar, and have everything else ready to toss.
