Sour Cream Horseradish Sauce

• 2 egg yolks
• 1 cup sour cream
• 1 tablespoon horseradish
• 14 teaspoon pepper
• 14 cup scallion, minced

1. Whisk egg yolks into sour cream.
2. Add other ingredients.
3. Heat very slowly over a double boiler, whisking occasionally, 8 to 10 minutes.
