Crepes Lucifer

  1. CREPES:.
  2. Combine flour, salt, eggs and egg yolk.
  3. Gradually stir in milk and water.
  4. Beat until smooth.
  5. Chill for 1/2 hour.
  6. Heat crepe pan until very hot and brush with melted butter.
  7. Pour batter to form a very thin layer.
  8. Cook until golden brown and then cook other side.
  9. (Note from author: I never cook the other side of a crepe.
  10. ).
  11. LUCIFER FILLING:.
  12. Whip together cream cheese, chocolate and enough milk to make fluffy filling.
  13. Spoon filling in crepes, roll, and serve with Flaming Lucifer Sauce.
  14. FLAMING LUCIFER SAUCE:.
  15. Combine butter, sugar, cornstarch and water in large skillet and heat, stirring, over low heat until butter melts.
  16. Add 3 tablespoons creme de cacao and simmer 5 minutes.
  17. Add remaining creme de cacao and brandy or rum .
  18. Ignite and pour over crepes.
