One Pot Tortollini and Spinach Soup - Salvatores' Saavy Soup

  1. In deep stockpot, fry bacon strips until crisp.
  2. Remove and set aside.
  3. Remove all but 2 tbsp (30 ml) bacon fat from stockpot.
  4. Turn heat to medium and add onions and garlic
  5. Cook until pearlized.
  6. Do not brown!
  7. Add the chicken broth and simmer (approx.
  8. 10 minutes)
  9. Add frozen spinach to simmering soup and allow to thaw.
  10. Add the tortollini.
  11. Simmer another 7 minutes or until tortollini rise to the top.
  12. Pour into soup bowls and top with crumbled bacon bits
