Get Along Roasted Roots

  1. HEAT the oven to 400F.
  2. PEEL the vegetables and cut them into 2-inch pieces.
  3. TOSS all the vegetables in the oil in a large roasting pan.
  4. Season with salt and pepper to taste.
  5. COOK for about 1 hour or until the vegetables are lightly browned and tender.
  6. Garnish with a sprinkle of parsley.
