Get Along Roasted Roots
- 5 medium red potatoes
- 3 medium sweet potatoes 6 medium carrots
- 2 medium onions, cut into wedges, or 1/2 pound frozen pearl onions
- 1/4 cup olive oil
- Kosher salt and black pepper
- Chopped fresh parsley
- HEAT the oven to 400F.
- PEEL the vegetables and cut them into 2-inch pieces.
- TOSS all the vegetables in the oil in a large roasting pan.
- Season with salt and pepper to taste.
- COOK for about 1 hour or until the vegetables are lightly browned and tender.
- Garnish with a sprinkle of parsley.
