Pretzel Dippers and Beer Cheese Sauce
- 4 tsp dry active yeast
- 1 1/4 cup warm water
- 1/4 cup sugar + 1 teaspoon
- 5 cup flour
- 1/4 brown sugar
- 1 1/2 tsp salt
- 4 tbsp melted butter, divided
- 1/2 cup baking soda
- 2 egg whites
- 1 coarse salt
- 1/2 cup cream cheese
- 1/2 cup beer
- 1/2 tsp garlic powder
- 1/2 tsp cayenne
- 1/2 tsp black pepper
- 1 cup velvetta
- In a measuring cup put the yeast, and the 1teaspoon of sugar into the warm water and let sit for 10 minutes to bloom.
- In a large bowl mix the flour, white and brown sugar, salt, and 2 tablespoons of melted butter.
- Add in the yeast water and form into a ball.
- Put the dough into a greased bowl and cover with plastic wrap and let sit for an hour.
- In a medium sized bowl combine 5 cups of water and the baking soda.
- In a smaller bowl combine the remaining butter with the egg whites.
- Dust the counter with flour and form your dough into sticks, balls, or braids.
- I prefer the sticks rolled out thinly.
- Drop the dough into the water and place on a greased baking pan.
- Brush on the butter and egg white mixture and sprinkle the coarse salt on the top.
- Bake in oven for 6 to 8 minutes or until brown in a 400F oven.
- **To Make The Beer Cheese**
- Put the cream cheese in a microwave safe bowl and microwave on high for 30 seconds then stir until smooth.
- Add the beer and the seasonings then microwave another 30 seconds on high.
- When this is smooth add in the Velveeta in small pieces and microwave until smooth.
- Serve warm!
