Tofu Teriyaki Noodle Salad
- 6 tablespoons fresh lime juice, divided
- 4 tablespoons honey, divided
- 3 tablespoons low sodium soy sauce
- 3 teaspoons dark sesame oil, divided
- 2 garlic cloves, minced
- 1 (12 1/3 ounce) packagereduced fat, firm water packed tofu (drained & cut into cubes)
- 4 ounces uncooked bean threads (noodles)
- diced red pepper
- coarsely chopped dry roasted peanuts
- chopped fresh cilantro
- Combine: 2 tbs lime juice, 2 tbs honey, soy sauce, 2 tsp oil, 2 tsps ginger and garlic in a large zip lock bag.
- Add tofu to bag.
- Marinate at least 1 hour in refrigerator.
- Remove tofu and discard marinade.
- Prepare noodles according to package directions.
- Combine 4 tbs lime juice, 2 tbs honey, 1 tsp oil and ginger in a large bowl.
- Stir with a whisk.
- Add the noodles, pepper, peanuts and cilantro.
- Toss gently to coat.
- Add tofu, stir gently to combine.
