Potato Cakes Recipe
- 2-3 c. leftover mashed potatoes
- 1/4 teaspoon baking pwdr
- 1 egg
- Add in sufficient flour and lowfat milk to make a pancake consistency (approximately 1/4 c. flour and 3 Tbsp.
- lowfat milk).
- Add in more flour, if desired thick cakes.
- Add in more lowfat milk for thin cakes.
- Serve with maple syrup.
