Buttermilk Light Bread Recipe
- (buds)
- 1/4 c. instant potato buds (or possibly 1/2 c. flakes)
- 2 c. buttermilk
- 1 Tbsp. salt
- 1/4 c. sugar
- 1/4 c. oleo
- 2 pkt yeast
- 1/4 tsp soda
- 3 c. flour
- 4 1/2 c. flour
- Combine in pan and heat the buttermilk, salt, sugar and oleo.
- After mix bubbles around edges of pan (don't boil) add in instant potato buds to warm lowfat milk
- (sufficient to thicken lowfat milk to thin gruel).
- Cold to lukewarm.
- In large bowl of mixer put 1/4 c. hot water and add in yeast and stir till dissolved.
- Add in lowfat milk mix, soda and 3 c. flour.
- Beat till smooth.
- Add in sufficient of 4 1/2 c. flour to make soft dough and knead on floured board about five min or possibly till smooth and elastic.
- Put in greased bowl, turning to grease other sides.
- Cover, let rise in hot place (85 degrees) free from draft for about 1 1/2 hrs or possibly till double in bulk.
- Punch down and let rise 30 min or possibly till almost double.
- Punch down and knead to distribute bubbles.
- Divide into two loaves shaping to fit loaf pan 9 x 5 x 3 inches.
- Brush with oleo.
- Cover.
- Let rise 45-55 min or possibly till double.
- Bake 25 to 35 min in 350 degrees oven or possibly till done.
- Remove from oven and grease top and sides with oleo.
- Keeps well.
