Avocado Tomato Boats
- 16 whole Grape Tomatoes, Halved
- 1 whole Green Onion, Chopped
- 13 cups Feta (crumbled)
- 1 Tablespoon Olive Oil
- 1/2 Tablespoons Lemon Juice
- Salt And Pepper, to taste
- 2 whole Avocados
- Parsley, For Garnish
- In a small bowl, place the tomatoes, green onion, feta cheese, olive oil, lemon juice and salt and pepper to taste.
- Mix gently.
- Halve the avocados and divide the salad among the 4 halves.
- Garnish with parsley and serve immediately.
