Zucchini Cheese
- 1-1/2 lb. zucchini
- 1/4 cup flour
- 1-1/2 tsp. salt
- 1-1/2 tsp. oregano
- 1/4 tsp. pepper
- 1/4 cup olive
- salad oil
- 2 md. tomatoes, sliced
- 1 cup sour cream
- 1/2 cup Parmesan cheese, grated
- Wash zucchini and cut crosswise into 1/4-inch slices.
- In medium bowl combine flour, 1/2 tsp.
- salt, 1/2 tsp.
- oregano and 1/8 tsp.
- pepper.
- Toss slices in seasoned flour and coat well.
- Heat oil in skillet and saute zucchini until golden brown - about four minutes each side.
- Drain.
- Cover the bottom of the baking dish with zucchini and top with tomato slices.
- Combine sour cream with remaining salt, oregano and pepper.
- Spread evenly over tomato slices.
- Sprinkle with cheese.
- Bake at 350F for 30-40 minutes or until cheese is melted.
