Mini Ice Cream Cakes Made with OREO Cookies

  1. Place 12 (4x1-1/2-inch) ring molds in parchment paper-lined sheet pan (or place 1 ring mold in prepared sheet pan for trial recipe).
  2. Place 1 OREO Cookie in center of each mold; cover with 3 oz.
  3. ice cream, spreading ice cream to completely cover paper in bottom of each mold.
  4. Spoon 2 Tbsp.
  5. OREO Pieces onto center of each ice cream layer; cover with second layer of 3 oz.
  6. ice cream.
  7. Press remaining OREO Cookies into center of each ice cream cake.
  8. Carefully remove rings.
  9. Freeze cakes 2 hours or until firm.
  10. Roll side of each ice cream cake in 2 Tbsp.
  11. sprinkles.
  12. Place in tightly covered container until ready to serve.
