Chicken and Kielbasa Gumbo
- 7 oz. lowfat kielbasa (half of a 14-oz pkg)
- 2 1/2 c. chicken broth
- 1 can Cajun stewed tomatoes
- 1 1/2 c. frozen pepper stir-fry mixture (yellow green and red bell pepper strips and onions)
- 1 box frozen sliced okra
- 1 c. uncooked 5-minute rice
- 1 box refrigerated skinless, fully cooked chicken breast
- Cook kielbasa in a 3-qt saucepan over medium-high heat, stirring often, 3 minutes, or until lightly browned.
- Add broth, tomatoes and stir-fry mixture.
- Cover and bring to a boil over high heat.
- Add okra; simmer 3 minutes.
- Stir in rice.
- Cover and simmer 1 to 2 minutes, or until vegetables and rice are tender.
- Stir in chicken; heat and serve.
