Marinated Greek Salad
- 4 roma tomatoes, finely diced
- 1 cucumber, finely diced
- 1 bell pepper, finely diced
- 1 vidalia onions or 1 red onion, finely diced
- 16 ounces cannellini beans, rinsed & drained
- 13 cup feta cheese, crumbled
- 14 cup extra virgin olive oil
- 12 cup red wine vinegar
- 1 teaspoon white vinegar
- 1 tablespoon minced fresh basil
- 1 teaspoon salt
- 12 teaspoon pepper
- Chop all veggies & place in a large bowl; add rinsed canellini beans.
- In a small bowl mix dressing ingredients.
- Pour dressing over salad and mix lightly.
- Sprinkle with feta cheese.
- Serve immediately or cover & refrigerate to allow flavors to blend more.
