Perfect Polenta Patties Recipe Blaksinger

  1. In a medium pot, mix stock, creamed corn, vegetables and bay leaves.
  2. Bring to a low boil.
  3. Once mixture is bubbling, add herbs or spices, mix well.
  4. Slowly add fine ground cornmeal to bubbling mixture, stirring constantly.
  5. The mixture will take on an oatmeal-like consistency, thickening in a very similar fashion.
  6. Cook over medium heat, stirring frequently until mixture is thick and pasty.
  7. Remove from heat and let stand 1030 minutes (until warm instead of boiling...) Remove bay leaves.
  8. Over medium high heat, lightly coat a pan with cooking oil.
  9. Spoon dollops of thick polenta into the pan.
  10. Pan fry until golden brown.
  11. Serve and enjoy!
