Chicken Biryani
- 6 skinless chicken thighs, bone-in, cut into pieces
- 1 inch ginger, minced
- 4 garlic cloves, minced
- 2 tablespoons cilantro, chopped
- 1 teaspoon curry powder
- 14 teaspoon ground nutmeg
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 12 teaspoon black pepper
- 2 12 cups basmati rice
- 3 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 bay leaves
- 1 black cardamom pod
- 3 green cardamom pods
- 1 cinnamon stick
- 1 teaspoon cumin seed
- 6 cloves
- 8 black peppercorns
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1 onion, sliced thin
- 1 tomatoes, chopped
- 1 hot pepper, chopped
- 3 12 cups water
- Season the chicken and set aside.
- Place the olive oil and butter in pot on medium-high heat.
- Saute onions till brown.
- Then add in the remaining spices, an cook for about 1-2 minutes on medium heat.
- Then toss in the chicken, an cook for about 15 minutes on medium-high heat covered.
- After that has cooked add in the hot pepper and tomatoes, an cook for 6 minutes covered.
- Constantly stir the food, so it does not burn.
- Then add in the rice and cook for about 2 minutes.
- Add in the water (add more salt to taste) an bring to a simmer.
- Cover an cook on low heat for 25 minutes.
