Crispy Chicken with Spicy Mango Dip

  1. Mix cracker crumbs and peanuts in shallow dish; set aside.
  2. Beat egg with wire whisk in medium bowl.
  3. Dip chicken in egg, then in crumb mixture, turning to evenly coat both sides of each chicken piece with the crumb mixture; gently shake off excess crumbs.
  4. Heat 1 Tbsp.
  5. of the oil in large nonstick skillet.
  6. Add half of the chicken; cook 5 min.
  7. on each side or until cooked through (170F).
  8. Repeat with remaining oil and chicken.
  9. Place mangos, mayo and pepper in food processor or blender; cover.
  10. Process until smooth.
  11. Pour through a strainer; discard strained solids.
  12. Serve mango mixture as a dip with the chicken.
