Sausalito Shrimp With Fettuccine Recipe
- 2 tbsp. butter
- 1 - 1 1/2 lbs. Market Day shrimp scampi
- 1 pound fresh mushrooms, sliced thin
- 1 sm. onion, minced
- 1 can artichoke hearts, quartered
- Cooked spinach fettucini, liquid removed
- 1/2 c. half and half
- 1/4 c. freshly grated Parmesan cheese
- Pepper to taste

- In a heavy skillet heat butter till sizzling.

- Saute/fry mushrooms and onions till tender.
- Add in shrimp scampi and saute/fry till the shrimp is pink, approximately 7 to 8 min.
- 3.
- Stir in artichoke hearts.
- Add in half and half and Parmesan cheese.
- 4.
- Stir in cooked fettucini; toss to combine.
- Cook over medium heat, stirring occasionally till heated through.
- (Fettucini can be served under shrimp mix if you like.)
