Black Bean Salsa
- 14 ounces, fluid Canned Black Beans, Drained And Rinsed
- 14 ounces, fluid Diced Canned Tomatoes, Lightly Drained
- 1 whole Jalapeno, Diced
- 1/4 cups Diced Onion
- 1/2 cups Frozen Or Fresh Corn Kernels
- 13 cups Italian Salad Dressing
- 1 whole Lime, Juiced
- 1 package (about 1 Oz. Packet) Taco Seasoning
- 1 whole Avocado, Gently Diced
- 1/4 cups Cilantro Leaves (optional)
- Place the beans, tomatoes, jalapeno, onion, corn, dressing, lime juice, and taco seasoning in a large bowl.
- Stir, and taste for seasoning.
- (Add some cayenne pepper if you like things spicier!)
- Before serving, gently stir in avocado and cilantro.
- Serve with chips, or over lettuce and shredded cheese for a quick Mexican-style vegetarian salad.
