Raspberry-Mint Brownies

  1. Heat oven to 350 degrees F.
  2. Line 9-inch square pan with foil, with ends of foil extending over sides; spray with cooking spray.
  3. Microwave chocolate and butter in large microwaveable bowl on HIGH 2 min.
  4. or until butter is melted.
  5. Stir until chocolate is completely melted and mixture is well blended.
  6. Add sugar; mix well.
  7. Blend in eggs, jam, mint extract and vanilla.
  8. Add combined flour and baking powder; mix well.
  9. Pour into prepared pan.
  10. Bake 35 to 40 min.
  11. or until toothpick inserted in centre comes out with fudgy crumbs.
  12. (Do not overbake.)
  13. Cool completely.
  14. Use foil handles to remove brownie from pan before cutting into bars.
  15. Serve topped with raspberries.
