Egg topped southern fried cabbage

  1. Cut bacon and fry in cast iron skillet with extra bacon fat.
  2. Add onions and ghee/butter to skillet, and let the onions brown.
  3. Add chopped or shredded cabbage to skillet and stir around.
  4. Cover and let cook 20 minutes or until soft.
  5. Add raw apple cider vinegar and salt and pepper to taste, then transfer to plate.
  6. Cook egg in desired fashion to top cabbage.
  7. I prefer crispy fried egg in olive oil.
  8. Heat olive oil in cast iron skillet.
  9. Once hot, turn off heat.
  10. Crack egg in skillet.
  11. With spoon, ladle hot oil over uncooked areas.
  12. When edges are crispy, transfer egg to plate
