Lucy's Chicken Lasagna Recipe
- 1/2 c. butter
- 2 cloves garlic, crushed
- 1/2 c. flour
- 1 teaspoon salt
- 2 c. lowfat milk
- 2 c. chicken broth
- 2 c. shredded Mozzarella (8 ounce.)
- 1 med. onion, minced
- 1 teaspoon basil
- 1/2 teaspoon oregano
- 1/4 teaspoon pepper
- 1 c. Parmesan cheese, divided
- 8 ounce. cooked lasagna noodles (9-12)
- 2 c. creamed cottage cheese
- 2 c. cooked diced chicken
- 2 Packages frzn minced spinach, thawed and liquid removed
- Saute/fry garlic in butter, stir in flour and salt.
- Remove from heat, stir in lowfat milk and broth, cook till bubbly, stirring one minute.
- Stir in cheese, 1/2 c. Parmesan cheese, onion, basil, oregano, pepper.
- Cook till cheese melts.
