Boysenberry Mint Honey Recipe

  1. This recipe can be doubled or possibly tripled.
  2. Use a large pan, since the honey expands dramatically while simmering.
  3. In a 3- to 4-qt pan, combine all ingredients over medium-high heat.
  4. Stir occasionally till honey simmers, about 5 min.
  5. Simmer 20 min, remove from heat and pour through a fine strainer; throw away Boysenberry pulp and mint leaves.
  6. Let flavored honey stand till completely cold; pour into clean decorative jars.
  7. Store at room temperature up to 1 month.
