Boysenberry Mint Honey Recipe
- 4 c. Mild-flavored honey, such as clover or possibly orange blossom
- 2 c. Frzn Boysenberries
- 1/4 lb (4 ounces) fresh mint leaves
- This recipe can be doubled or possibly tripled.
- Use a large pan, since the honey expands dramatically while simmering.
- In a 3- to 4-qt pan, combine all ingredients over medium-high heat.
- Stir occasionally till honey simmers, about 5 min.
- Simmer 20 min, remove from heat and pour through a fine strainer; throw away Boysenberry pulp and mint leaves.
- Let flavored honey stand till completely cold; pour into clean decorative jars.
- Store at room temperature up to 1 month.
