Kristie's Delicious Crab Cakes!!
- 1 lb fresh lump crabmeat
- 2 12 cups soft breadcrumbs (Ritz crackers, crushed or pulsed in the blender)
- 1 egg, beaten
- 34 cup mayonnaise
- 13 cup chopped finely red bell pepper
- 13 cup chopped finely yellow bell pepper
- 13 cup chopped finely orange bell pepper
- 13 cup chopped green onion
- 1 tablespoon seafood seasoning (Cajun or old bay)
- 1 -2 tablespoon minced fresh parsley
- 2 tablespoons fresh lemon juice
- 1 teaspoon Worcestershire sauce
- 2 teaspoons yellow mustard
- 14 teaspoon black pepper
- 1 dash hot pepper sauce
- lemon zest
- Directions.
- PREHEAT OVEN 350.
- COMBINE ALL INGREDIENTS IN A BOWL, HAND MIX,.
- REFRIDGERATE FOR 30 minutes
- IN A MUFFIN TIN OR COOKIE SHEET, SPRAY WITH PAM, SCOOP CRAB MIXTURE WITH 1/4 MEASURING CUP, MAKES
- 12 CRAB CAKES.
- BAKE 20 minutes
- BROIL FOR 5-8 minutes OR UNTIL GOLDEN BROWN.
- SERVE WITH LEMON SLICES, AND TARTER SAUCE.
- (OPTIONAL).
- SERVE WITH FIELD GREEN SALAD.
