Chicken Acapulco

  2. Preheat oven to 400 degrees F and coat a baking dish with cooking spray.

  4. Combine bread crumbs with Parmesan and seasonings.

  6. Lay pounded chicken breasts on your work surface.
  7. Spoon chiles in a row across center of each breasts.
  8. Add a strip of Monterey Jack cheese next to the chiles.

  10. Roll up each breast and dip in melted butter, then roll in the crumb mixture.

  12. Place in the prepared pan and bake uncovered in the 400 degrees F oven for 3540 minutes or until juices run clear.

  14. Pass salsa and sour cream for anyone who wants to top their chicken.
