Gorgonzola & Walnut Rounds

  1. In a bowl add softened cream cheese and Gorgonzola cheese.
  2. Mix with a rubber spatula.
  3. Add apricot pieces and black pepper; mix well until smooth.
  4. On a plate add walnut pieces.
  5. Using your clean hands and a teaspoon scoop cheese mixture into rounds and place on top of walnut pieces, rolling the ball to coat all sides.
  6. Place balls on a platter and repeat until all cheese mixture/walnuts are used.
  7. (I usually wet my hands to roll the rounds out).
  8. Cover the platter tightly with plastic wrap and refrigerate for one hour before serving.
  9. I like to serve these with a variety of crackers.
  10. Enjoy!
