Gorgonzola & Walnut Rounds
- 1 block (8 Oz. Size) Cream Cheese, Softened
- 1 container (8 Oz. Size) Gorgonzola (or Mild Bleu Cheese Crumbles, Room Temperature)
- 23 cups Dried Apricots, Finely Chopped
- 1/4 teaspoons Black Pepper
- 1- 1/2 cup Walnut Pieces
- In a bowl add softened cream cheese and Gorgonzola cheese.
- Mix with a rubber spatula.
- Add apricot pieces and black pepper; mix well until smooth.
- On a plate add walnut pieces.
- Using your clean hands and a teaspoon scoop cheese mixture into rounds and place on top of walnut pieces, rolling the ball to coat all sides.
- Place balls on a platter and repeat until all cheese mixture/walnuts are used.
- (I usually wet my hands to roll the rounds out).
- Cover the platter tightly with plastic wrap and refrigerate for one hour before serving.
- I like to serve these with a variety of crackers.
