Salmon & Corn Chowder with Bacon

  1. Heat oil in medium saucepan on medium-high heat.
  2. Add onions, celery and garlic; cook 5 min.
  3. or until crisp-tender, stirring frequently.
  4. Stir in flour; cook and stir 1 min.
  5. Whisk in milk.
  6. Add potatoes, corn and thyme; cover.
  7. Simmer 20 min.
  8. or until potatoes are tender.
  9. Stir in VELVEETA and mustard; cover.
  10. Simmer on medium-low heat 5 min.
  11. or until VELVEETA is melted.
  12. Stir in fish; cook 8 min.
  13. or until fish flakes easily with fork.
  14. Remove and discard thyme sprigs.
  15. Top chowder with bacon.
  16. Serve with crackers.
