Gnocchi with Goat Cheese, Grape Tomatoes and Basil
- 1 package (about 17.6 Oz. Size) Gnocchi (or Homemade)
- 1 log (about 6 Oz. Size) Goat Cheese
- 1/2 cups Reserved Cooking Water From Boiling Gnocchi
- 2 cups Grape Tomatoes, Halved
- 1/2 cups Torn Fresh Basil Leaves
- Fresh Ground Black Pepper
- Cook gnocchi in boiling salted water for a couple minutes until all the gnocchi float.
- Drain and save 1/2 cup water.
- Transfer the hot gnocchi to a large bowl, add goat cheese, cooking water, cherry tomatoes and basil.
- Mix well so cheese melts.
- Season with a little black pepper to taste.
- Serve immediately (this isnt a good dish to reheat).
