Spinach-Pasta Toss
- 1 can (28 fl oz/796 mL) no-salt-added diced tomatoes, undrained
- 1/2 tsp. dried oregano leaves
- 3 cups multi-grain penne pasta, uncooked
- 1 cup water
- 7 cups loosely packed baby spinach leaves
- 1 cup Cracker Barrel Shredded Part Skim Mozzarella Cheese
- Bring first 4 ingredients to boil in large saucepan, stirring occasionally.
- Simmer on medium-low heat 10 to 12 min.
- or just until pasta is tender, stirring occasionally.
- Stir in half the spinach; cover.
- Simmer 2 min.
- or just until spinach is wilted.
- Repeat with remaining spinach.
- Serve topped with cheese.
