Poached Eggs on Thick Cheesy Toast

  1. Bring a saucepan of water to the boil with the vinegar.
  2. Reduce to a slight simmer and add the eggs.
  3. Allow to cook for 3-4 minutes, or until cooked to your liking.
  4. Remove from the water with a slotted spoon.
  5. Place tomatoes onto an oven tray, sprinkle with pepper.
  6. Place under a hot grill for 5 minutes until heated through.
  7. Combine cream cheese with the chives and pepper until smooth.
  8. Spread over each slice of toast and top with spinach leaves and egg.
  9. Serve with a grilled tomatoes.
