Blueberries And Cream Pie Recipe
- 4 c. fresh or possibly partially thawed blueberries
- 1 unbaked 9" pie shell
- 2/3 c. sugar
- 1/4 c. flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 c. heavy cream, sweetened & whipped
- 1/2 c. lowfat milk
- Set oven to 400 degrees.
- Pour blueberries in shell.
- In a small bowl combine sugar, flour, cinnamon and salt.
- Stir in cream and lowfat milk with wire whisk.
- Pour over berries.
- Bake 45 min.
- If edges brown too fast, use aluminum foil strips to cover.
- Cold on wire rack; then chill.
- Garnish with whipped cream.
- Serves 8.
