Mexicorn Bread Recipe
- 1 (8 1/2 ounce.) box Jiffy corn muffin mix
- 1 3/4 c. self rising meal
- 1 sm. onion, minced
- 1/2 c. green pepper, minced
- 1 (11 ounce.) can mexicorn
- 1 sm. jar minced mushrooms
- 1 c. cheddar cheese
- 1 c. Mozzarella cheese
- 2 Large eggs
- 1/2 c. flour
- 1/2 c. buttermilk
- 1 c. beer
- 1/2 c. oil
- 1/2 c. jalapenos (optional)
- Mix all ingredients except oil in large bowl.
- Heat oil in iron skillet till warm.
- Pour oil in mix.
- Pour skillet 1/2 full, cover with cheese, pour in remaining batter.
- Bake at 400 degrees for 40 min.
