Wasabi Mashed Potatoes
- 2 lbs red potatoes, cubed
- 14 cup fat-free low-sodium chicken broth
- 14 cup low-fat sour cream
- 2 tablespoons butter
- 1 teaspoon wasabi paste
- 12 teaspoon salt
- 14 teaspoon black pepper
- Place potatoes in a large saucepan, and cover with water.
- Bring to a boil, and cook 15 minutes or until tender.
- Drain.
- Place potatoes and the rest of the ingredients in a bowl, and mash to desired consistency.
