White Chocolate Almond Cookies
- 2 cups all-purpose flour
- 2 teaspoons cornstarch
- 1 teaspoon baking soda
- 3/4 cup butter, softened (if using margarine, use the stick type for the best results )
- 1 cup brown sugar (light or dark your choice )
- 1/4 cup granulated sugar
- 1 large egg, slightly beaten
- 2 teaspoons real vanilla (can use imitation )
- 1 cup white chocolate chips
- 1/2 - 3/4 cup crushed almonds
- Preheat oven to 350 degrees.
- In a medium size bowl mix together flour,cornstarch, and baking soda, set aside.
- In a large bowl, mix together butter and sugars until creamy.
- Add egg and vanilla, blending well.
- Add flour mixture a little at a until well blended ( batter will be slightly thick ).
- Then add chips and almonds, mixing well.
- Drop by Tablespoons onto a greased cookie sheet, and bake for 8 to 12 minutes( depending on your oven) until golden brown around the edges.
- Let cool on cookie sheet for 3 minutes, then remove and let finish cooling on wire cooling rack.
