Joy'S Pasta With Chicken And Broccoli
- 1/4 c. oil
- 2 garlic cloves, finely chopped
- 1/2 lb. boneless chicken breasts, cut crosswise into 1/2-inch wide strips
- 1 1/2 c. broccoli florets
- 3 sun-dried tomatoes, thinly sliced
- 1 tsp. dried basil
- pinch of crushed red pepper flakes
- salt and pepper
- 1/4 c. dry white wine
- 3/4 c. chicken broth
- 1 Tbsp. butter
- 1/2 lb. bow tie pasta, cooked and drained
- grated cheese
- In a large skillet, heat the oil.
- Saute garlic 1 minute until golden, stirring constantly. Add chicken strips and saute until white, about 7 to 10 minutes. Add broccoli and saute until crisp-tender.
- Add tomatoes, basil, red pepper flakes, salt and pepper. Add wine, chicken broth and butter.
- Cook 3 to 5 minutes, stirring constantly.
- Toss pasta with chicken mixture. Serve with grated cheese.
- Makes 4 servings.
