Super Easy Madeleines
- 200 grams 1 Cake flour
- 200 grams 1 Powdered sugar
- 1/2 tsp 1 Baking powder
- 1 pinch 1 Salt
- 4 2 Egg
- 6 drops 2 Vanilla oil
- 200 grams 3 Butter (unsalted)
- Whisk the dry ingredients in a bowl (or sift for similar results).
- Add beaten eggs and the vanilla oil and whisk all the ingredients together.
- (Stop mixing when the dry ingredients are incorporated).
- Add melted butter in three batches, stirring well with a rubber spatula after each addition.
- Optional: If you let the batter rest in the fridge for 30 minutes, it'll make the cakes more delicious (I put the batter in a piping bag and let it chill).
- Coat the molds with butter, dust with flour and shake off the excess.
- Fill the molds with the batter (about 3/4 since the cake will rise in the oven).
- Preheat the oven to 390F/200C.
- Place the madeline mold into the oven.
- Reduce the temperature to 350F/180C and bake for about 17 minutes (depending on your oven and the mold, baking time may be between 15-20 minutes).
- Scallop and heart shaped.
- These are bear and tart shaped.
- Mini Gugelhupf.
- Winnie-the-Pooh and Hello Kitty shapes.
- The madeleine moulds (shell, heart, bear, scallop, rose and tart) can easily be bought online.
- If you want to make cake-like madeleines, use a tart mould.
- If you want tiny ones with an elevated centre, choose a deep mould.
