Super Easy Madeleines

  1. Whisk the dry ingredients in a bowl (or sift for similar results).
  2. Add beaten eggs and the vanilla oil and whisk all the ingredients together.
  3. (Stop mixing when the dry ingredients are incorporated).
  4. Add melted butter in three batches, stirring well with a rubber spatula after each addition.
  5. Optional: If you let the batter rest in the fridge for 30 minutes, it'll make the cakes more delicious (I put the batter in a piping bag and let it chill).
  6. Coat the molds with butter, dust with flour and shake off the excess.
  7. Fill the molds with the batter (about 3/4 since the cake will rise in the oven).
  8. Preheat the oven to 390F/200C.
  9. Place the madeline mold into the oven.
  10. Reduce the temperature to 350F/180C and bake for about 17 minutes (depending on your oven and the mold, baking time may be between 15-20 minutes).
  11. Scallop and heart shaped.
  12. These are bear and tart shaped.
  13. Mini Gugelhupf.
  14. Winnie-the-Pooh and Hello Kitty shapes.
  15. The madeleine moulds (shell, heart, bear, scallop, rose and tart) can easily be bought online.
  16. If you want to make cake-like madeleines, use a tart mould.
  17. If you want tiny ones with an elevated centre, choose a deep mould.
