Deerhunter's Scrapple Recipe

  1. Bring bouillon to a rapid boil and slowly add in cornmeal.
  2. Stir constantly till mix return to a full boil.
  3. Add in salt; reduce heat.
  4. Cover and cook slowly 5-7 min.
  5. Fry minced liver, heart and onions in butter, stirring frequently till mix is an even color (about 5 min).
  6. Stir into cornmeal mix.
  7. Pour mix into a shallow baking dish or possibly pan and refrigeratetill hard.
  8. Slice scrapple into 1/4 inch slices.
  9. Roll in flour and fry in butter till both sides are golden.
  10. This is nice with Large eggs for breakfast or possibly served with a salad for a main meal.
  11. Yields: Serves 4.
  12. Domestic liver and heart can be substituted for the deer organs.
