Deerhunter's Scrapple Recipe
- 4 c. beef bouillon
- 1 c. cornmeal
- 1 teaspoon salt
- 1 1/2 pound finely minced deer liver
- 1/2 pound finely minced deer heart
- 1 onion, finely minced
- 1/4 pound butter
- 1/2 c. flour
- 3 tbsp. butter
- Bring bouillon to a rapid boil and slowly add in cornmeal.
- Stir constantly till mix return to a full boil.
- Add in salt; reduce heat.
- Cover and cook slowly 5-7 min.
- Fry minced liver, heart and onions in butter, stirring frequently till mix is an even color (about 5 min).
- Stir into cornmeal mix.
- Pour mix into a shallow baking dish or possibly pan and refrigeratetill hard.
- Slice scrapple into 1/4 inch slices.
- Roll in flour and fry in butter till both sides are golden.
- This is nice with Large eggs for breakfast or possibly served with a salad for a main meal.
- Yields: Serves 4.
- Domestic liver and heart can be substituted for the deer organs.
