Spicy Sausage and Penne

  1. Chop all the vegetables into thick slices/chunks.
  2. Depending on the level of spice you are comfortable with, feel free to use half the jalapeno, or mild Italian sausage.
  3. Put olive oil and onions into a pot, set on medium high heat.
  4. Add the sausage and break it into smaller bite sized pieces as it is cooking.
  5. Once the meat is browned, add the tomatoes, zucchini, jalapeno, portabello mushrooms and basil.
  6. Stir and keep on medium high for 10 15 minutes.
  7. Reduce the heat to low, and let simmer for about an hour.
  8. If the sauce is too runny, add a little corn starch.
  9. Taste.
  10. Add salt and pepper or other spices if desired.
  11. When the sauce has been simmering for 40 45 minutes, boil some water in another pot and cook the penne pasta (following the intructions on the box).
  12. Strain the pasta.
  13. Put some in a bowl and add the sauce.
  14. Top with parmesan cheese.
  15. Enjoy!
