Spicy Sausage and Penne
- 1 whole Onion
- 13 whole Tomatoes
- 1 whole Zucchini
- 1 whole Jalapeno Pepper
- 3 whole Portabello Mushrooms
- 1 box Penne Pasta (16 Ounce Box)
- 2 Tablespoons Olive Oil
- 6 whole Spicy Italian Sausages
- 2 Tablespoons Chopped Basil
- Salt And Pepper, to taste
- 1 Tablespoon Cornstarch Mixed In A Bit Of Water (if Necessary For Thickening)
- Parmesan Cheese, Optional Garnish
- Chop all the vegetables into thick slices/chunks.
- Depending on the level of spice you are comfortable with, feel free to use half the jalapeno, or mild Italian sausage.
- Put olive oil and onions into a pot, set on medium high heat.
- Add the sausage and break it into smaller bite sized pieces as it is cooking.
- Once the meat is browned, add the tomatoes, zucchini, jalapeno, portabello mushrooms and basil.
- Stir and keep on medium high for 10 15 minutes.
- Reduce the heat to low, and let simmer for about an hour.
- If the sauce is too runny, add a little corn starch.
- Taste.
- Add salt and pepper or other spices if desired.
- When the sauce has been simmering for 40 45 minutes, boil some water in another pot and cook the penne pasta (following the intructions on the box).
- Strain the pasta.
- Put some in a bowl and add the sauce.
- Top with parmesan cheese.
- Enjoy!
