Easy No-Bake Mint Bars
- 12 cup butter
- 1 (10 ounce) package mint chocolate chips
- 2 cups chocolate wafer crumbs
- 14 cup butter, softened
- 1 tablespoon milk
- 12 teaspoon peppermint extract
- 12 teaspoon vanilla
- 1 drop green food coloring
- 2 cups powdered sugar
- 12 cup butter
- Lightly grease 9-inch square pan.
- In saucepan, combine 1/2 cup butter and 1/4 cup of the chocolate chips.
- Cook over low heat until melted, stirring constantly.
- Remove from heat; stir in cookie crumbs until well mixed.
- Press crumb mixture evenly in greased pan.
- Refrigerate 10 minutes or until firm.
- Meanwhile, combine 1/4 cup butter, milk, peppermint extract, vanilla and food color.
- Gradually beat in powdered sugar until smooth.
- Spread over crumb mixture.
- Melt remaining chips and 1/3 cup butter over low heat, stirring constantly.
- Spread evenly over bars.
- Refrigerate 10-15 minutes or until chocolate is set.
- Cut into square bars.
