Easy No-Bake Mint Bars

  1. Lightly grease 9-inch square pan.
  2. In saucepan, combine 1/2 cup butter and 1/4 cup of the chocolate chips.
  3. Cook over low heat until melted, stirring constantly.
  4. Remove from heat; stir in cookie crumbs until well mixed.
  5. Press crumb mixture evenly in greased pan.
  6. Refrigerate 10 minutes or until firm.
  7. Meanwhile, combine 1/4 cup butter, milk, peppermint extract, vanilla and food color.
  8. Gradually beat in powdered sugar until smooth.
  9. Spread over crumb mixture.
  10. Melt remaining chips and 1/3 cup butter over low heat, stirring constantly.
  11. Spread evenly over bars.
  12. Refrigerate 10-15 minutes or until chocolate is set.
  13. Cut into square bars.
