Baked Donuts
- 2 cups cake flour
- 1 cup splenda
- 1/4 cup cocoa powder
- 2 tsp baking powder
- 1 tsp salt
- 1 cup buttermilk
- 2 eggs
- 2 tbs veg. oil
- Preheat oven at 450F and coat pan with cooking spray.
- In one bowl combine all dry ingredients and in another all the wet ones.
- Start adding little by little the dry mixture into the wet, stirring constantly until fully combined.
- Don't over mix the mixture.
- I like to use a pipping bag, place all the filling there and it will be easier to fill the pans.
- (2/3 full).
- Bake for 8 minutes.
- Leave the donuts in pan for 5 minutes before letting them cool down in a rack.
- Chocolate glaze: 1 cup splenda 3 tbs cocoa powder 3 tbs milk 1 tbs vanilla extract 1 cup salted peanuts
- Sift the cocoa and splenda into a bowl.
- Add the milk and vanilla, you can add more milk to thin.
- Dip half donut in the glaze and let it cool.
- I sprinkle the chocolate ones with chopped salted peanuts!
- For the vanilla ones, white glaze and toasted shaved macademia.
