Dodo: Fried Plantains

  1. Rinse the plantains in cold water.
  2. Peel them, and slice horizontally then vertically into half-moon shapes about 3/4-inch wide.
  3. Sprinkle with salt, to taste.
  4. Pour oil into the frying pan and heat on medium-high.
  5. When oil is hot enough, add the plantains in batches; don't overcrowd.
  6. Fry plantains until golden brown.
  7. Drain on paper towels.
  8. Taste and season again with salt.
  9. Repeat with remaining plantains.
