Easy Muffins Recipe
- 2 c. flour
- 3 teaspoon baking pwdr
- 1 egg, lightly beaten
- 3 tbsp. melted Crisco
- 2 tbsp. sugar
- 1 teaspoon salt
- 1 c. lowfat milk
- 1 c. blueberries (for blueberry muffins)
- Preheat oven to 400 degrees.
- In bowl, combine dry ingredients.
- Stir together egg, lowfat milk and Crisco.
- Add in this all together to the dry ingredients mixing briskly till just mixed.
- Fill greased muffin tins 2/3 full.
- Bake 20 to 25 min.
- Makes 1 dozen.
- To make blueberry muffins, add in the blueberries, folding them in slightly just before you fill the muffins tins.
