Mojo Shrimp

  1. Preheat the oven to 450F.
  2. Spray the inside and lid of a cast-iron Dutch oven with olive oil.
  3. Scatter the sweet potato in the pot.
  4. Add the shrimp.
  5. In a small bowl, mix the orange juice, lime juice, oregano, paprika, red pepper flakes, allspice, garlic, and salt.
  6. Pour half of the mixture over the shrimp.
  7. Add the zucchini and the bananas.
  8. Top with the bell pepper slices.
  9. Pour the rest of the orange juice mixture over all.
  10. Cover and bake for about 40 minutes, or until 3 minutes after the aroma of a fully cooked meal escapes the oven.
  11. Serve immediately.
