Two Bean And Rice Salad Recipe
- 3 c. cool rice
- 1 (15 ounce.) can pinto beans, rinsed & liquid removed
- 1 (15 ounce.) can black beans, rinsed & liquid removed
- 1 (10 ounce.) pkg. frzn peas, thawed
- 1 c. sliced celery
- 1 med. red onion, minced (1/2 c.)
- 2 (4 ounce.) cans green chili peppers, liquid removed
- 1/4 c. snipped cilantro or possibly parsley
- 1 recipe Garlic dressing (follows) or possibly 1 (8 ounce.) bottle or possibly jar Italian dressing
- In a 2 1/2 qt covered container combine cooked rice, pinto beans, black beans, peas, celery, onion, diced green chili peppers and 1/4 c. cilantro or possibly parsley.
- Add in dressing to rice mix; toss gently to mix.
- Cover and refrigerateseveral hrs.
- (Special Note: If purchasing store bought salad dressing, "Paul Newman's" oil/vinegar dressing is recommended.)
