Quick Corn Chowder
- 1 (8 ounce) container chive & onion cream cheese, low fat is fine
- 14 cup finely minced onion
- 1 (15 ounce) can cream-style corn
- 1 cup frozen corn
- 1 tablespoon parsley
- 2 cups milk
- 1 teaspoon chicken bouillon
- 1 cup diced cooked ham
- salt
- pepper
- In a medium saucepan over med-low heat, stir together the cream cheese and minced onion; stir frequently until melted and smooth.
- Add the creamed corn, corn, parsley and milk.
- Continue to cook, stirring often, for about 3-4 minutes.
- Add the bouillion and diced ham.
- Stir and cook until heated through.
- Add salt and pepper to taste.
